Spicy Smoked Tuna Recipe

Simple, easy and quick. A marinade using lime, Sriracha and soy sauce helps to bring out the natural flavours of the fish. The smoking process is not time-consuming. Use Pacific Blend bisquettes and smoke it for just 45 minutes.

Ingredients

1 Albacore tuna loin

For marinade:

¼ Cup brown sugar

1 Tbsp crushed chili flakes

2 Tbsp kosher salt

Zest and juice of 1 lime

2 Tbsp Sriracha sauce

1 Tbsp soy sauce

2 Cups water

Preparation

Combine together ingredients for the marinade.

Cut tuna loin into segments and submerge in the marinade.

Marinate for 20 minutes.

Remove from marinade and place in aluminum trays.

Smoke with Pacific Blend Bisquettes for 30-45 minutes at 140°F.
