Smoked Chipotle Lime Fajitas with Pico de Gallo Recipe
Ingredients
For the Chipotle Lime Fajitas:
4 Boneless skinless chicken breasts
2 Tbsp chipotle powder
1 Tbsp sugar
1 Tsp salt
1 Tsp ground cumin
½ Tsp ground cinnamon
2 Limes
Soft tortilla shells
Pico de gallo (recipe below)
Other fajita toppings (cheese, sour cream, guacamole)
For the Pico de Gallo:
2-3 Medium tomatoes - diced
½ Sweet onion - finely diced
1 Jalapeno pepper - minced (optional)
3 Tbsp fresh cilantro - minced
Juice of 1 lime
Preparation
For the Chipotle Lime Fajitas:
Mix together the chipotle powder, sugar, salt, cumin, cinnamon to make the spice rub. Rub the spice blend all over the chicken breasts.
Set the grill to medium high heat.
Place chicken breasts on grill and cook for 4-5 minutes per side, until the internal temperature of the meat reaches 165ºF.
Remove the meat from the grill and squeeze lime juice on the chicken.
Slice the chicken breasts and assemble fajitas. Serve immediately.
For the Pico de Gallo:
Toss all ingredients together.
Serve on tacos, fajitas or scoop with tortilla chips.
